Cold water keeps the eggs from overcooking; if you don't cool
them, soft-boiled eggs may become hard-boiled eggs if not eaten
quickly enough. This matters once you have mastered the Timing of
Cooking, but not the Timing of Eating.

Cold water also does help with peeling, in that it prevents Burnt
Fingertips.

In my experience adding a bit of salt to the (boiling) water
accomplishes what you were probably hoping for: loosening the
shell from the egg-white.

For perfect soft-boiled eggs, you want salty water, correct
timing and cold water afterwards. In my humble (cooking eggs
every single day for my daughter) experience, that is...
