I've seen some, like the one where they cracked some GSM encryption.  I don't know much about the channel-hopping schemes though.  If you are not worried about real-time responses (i.e. making phone calls), you can just log the data, and crack the encryption later.  The channel hopping speed is probably harder to deal with, but it might be possible to use multiple dongles like this to log multiple channels simultaneously.

These things are starting to get cheap enough that it might be feasible to just log all of the GSM channels and figure out the rest later.
